
Rastignac Cognac is a contemporary cognac house founded in 2008 by brothers David and Julien Pannaud. Leaving behind their urban careers, the brothers chose to embrace the world of viticulture and distillation by acquiring the historic Château des Plassons, a 15th-century estate nestled in the Bons Bois cru of the Cognac region. This château, surrounded by 120 hectares of vineyards, became the core of their mission to produce refined, expressive cognacs with a strong connection to the land.
The Château des Plassons itself is a remarkable part of the region's heritage, with its architecture and historical relevance dating back centuries. The vineyards are planted on limestone-rich soils that lend a distinctive lightness and fruitiness to the eaux-de-vie produced here. The unique terroir of the Bons Bois area allows Rastignac Cognac to craft elegant spirits with a fresh and lively character.
Rastignac offers a range of cognacs, including VS, VSOP, and XO expressions. The VS is bright and aromatic, with floral notes and a touch of spice, ideal for cocktails or sipping neat. The VSOP presents a more complex profile with hints of dried fruits, honey, and gentle spices like licorice and nutmeg. Their XO is a standout—aged to perfection, it features rich layers of overripe plum, dark chocolate, and vanilla, balanced by a smooth and mellow finish that reveals the mastery behind its creation.
